Melt butter in a small sauce pan. Add sugar and stir until all sugar has been dissolved. Stir in cream and vanilla extract. Mix together well. Set aside to cool.
In a mixing bowl, combine the milk, flour, and egg. Mix thoroughly until well combined. Set aside.
Make three (3) horizontal slices ¾ of the banana then slightly push them outward into a fan-like shape. Coat the banana with the egg mixture and deep fry for 1-2 minutes or until golden brown. Place them on a paper towel to absorb excess oil.
Place on a serving plate and drizzle with the syrup. Place a scoop of mango ice cream on top. Serve while the banana is still hot.
Notes
Use plantain as an alternative to saba.
