Heavenly Banana Fritters with Caramel Cream Syrup

Ingredients
  • 50 g butter
  • 5 tbsp sugar
  • 5 tbsp cream
  • ¼ tsp vanilla extract
  • 1 egg
  • ⅛ cup non-fat milk
  • ¼ cup flour
  • 5 saba banana
  • oil for deep frying
Instructions
  1. Melt butter in a small sauce pan. Add sugar and stir until all sugar has been dissolved. Stir in cream and vanilla extract. Mix together well. Set aside to cool.
  2. In a mixing bowl, combine the milk, flour, and egg. Mix thoroughly until well combined. Set aside.
  3. Make three (3) horizontal slices ¾ of the banana then slightly push them outward into a fan-like shape. Coat the banana with the egg mixture and deep fry for 1-2 minutes or until golden brown. Place them on a paper towel to absorb excess oil.
  4. Place on a serving plate and drizzle with the syrup. Place a scoop of mango ice cream on top. Serve while the banana is still hot.
Notes
Use plantain as an alternative to saba.
