Spicy Garlic Peanuts

Ingredients
  • 3½ raw peanuts
  • 6 cups water
  • 2½ cups vegetable oil
  • 3 heads garlic (sliced thinly)
  • 4 pieces cayenne pepper (sliced thinly)
  • ½ tbs salt
Instructions
  1. Cook raw peanuts in boiling water for 1-2 minutes. Drain peanuts and rinse in cool running water to avoid it from cooking further. Line a baking tray with paper towels, place your drained peanuts. Allow peanuts to sit for 30 to 60 minutes to dry up excess water.
  2. Heat cooking oil in a deep pan and add the dried peanuts. Lower heat and cook for 25-35 minutes, stir often to avoid peanuts from burning. When you hear popping sounds from the peanuts, add the sliced garlic. Stir often until garlic turns golden brown. Drain the cooked peanuts in a colander when the mixture is already reddish brown, shake of excess oil. Sprinkle with salt and add the sliced cayenne pepper. Mix well. Cool the spicy salted peanuts before serving.
Notes
You can replace the cayenne pepper with chili powder or cayenne powder. Add in small amounts or to your desired liking. Store in an air-tight container to last longer. This will be good in storage for days.
