  • 250 g pork, chopped
  • 400 g kabocha squash, peeled, seeded and cut into 1 inch cubes
  • 200 g bitter melon (See note)
  • 150 g eggplant
  • ¼ cup shrimp paste
  • 1 cup water
  • 1 onion, chopped
  • 2 garlic gloves, crushed
  • 1 piece red bell pepper, julienne
  • 5 mild green chili peppers
  • 4 tomatoes, quartered
  • 1 bunch string beans, cut in 3 inches length
  • salt

  1. In a saute pan, heat oil and add onion. Cook until onion softens. Add garlic.
  2. Stir in pork, cook until lightly browned.
  3. Add squash, paste, and water. Bring to a boil. Simmer in low heat for 5 minutes. Covered.
  4. Stir in the rest of the vegetables. Season with salt and pepper. Cook until almost dry and vegetables are tender.
Cut the bitter melon lengthwise. After carefully removing the seeds, slice it.
