Cottage Pie is a classic comfort-food bake built in two clear layers, a savory beef filling underneath and a smooth, buttery mashed potato topping over it. The beef base gets real depth from a mix of tomato paste, tomato sauce, Worcestershire sauce, and beef stock, thickened with a bit of flour into a rich, clingy gravy rather than a thin, watery filling, with rosemary and thyme adding a herbal note that keeps it from tasting like a plain beef stew. A touch of brown sugar rounds out the acidity from the tomato, balancing the whole filling without making it taste sweet.

The potato topping is where the texture contrast comes in. Mashed with butter and milk until smooth, then finished with an egg yolk once cooled, it bakes up into a topping that turns lightly golden and slightly firm on top while staying soft and creamy underneath, a nice contrast to the rich, saucy beef beneath it. Spreading the potatoes over the filling before baking lets the two layers cook together just enough for the top to set without the filling drying out. The result is a dish that’s hearty and layered, a deeply savory meat filling under a soft, golden potato crust, the kind of bake that only gets better as the sauce has time to soak further into the meat.
