Instructions
Crust
- Combine crushed Graham crackers, brown sugar, cinnamon, and a pinch of salt, then add the melted butter and mix well.
- In a 9-inch circular cake pan (use a pan with removable sides), spread the crust mixture evenly and press it into the bottom to form a solid crust as it cools.
- Refrigerate the pan to cool.
Cream Filling
- Place the cream cheese in a mixing bowl and use a mixer until it becomes smooth; add sugar and mix again until it becomes fluffy.
- Then blend in the vanilla and lemon juice. Set aside. In a separate bowl, whip the whipping cream until soft peaks form.
- Fold the cream into the cream cheese mixture.
- Once done, spread over the cold crust.
- Refrigerate for 1 hour so it doesn't collapse when you top it off with blueberries.
Blueberry Topping
Note: If your can of blueberries is sweet enough, you can skip step 3. You can top it off directly on your cream.
- Heat your canned blueberries over medium heat until they start to boil, then add the sugar and stir continuously until the sugar blends in and the mixture reaches your desired consistency.
- Allow to cool. After the cream sets, take it out of the freezer and top it off with the cooled blueberries.
This is a no-bake cheesecake that gets its structure entirely from chilling rather than an oven, which keeps the filling light and mousse-like instead of dense and baked. The crust is a simple graham cracker base with a touch of brown sugar and cinnamon, giving it a warm, slightly spiced backdrop for the filling.
The filling itself is where the texture really comes together. Cream cheese is beaten smooth and sweetened, then brightened with lemon juice and vanilla before whipped cream is folded in, which is what gives the finished cheesecake its airy, almost cloud-like consistency rather than a heavy, custardy one. That lightness pairs well with the topping: blueberries simmered down with sugar into a glossy, jammy syrup that’s cooled completely before it goes on top, so it sits as a distinct layer rather than soaking into the filling. The lemon in the filling and the natural tartness of the blueberries keep the whole thing from tipping too sweet, balancing out the richness of the cream cheese and whipped cream. Chilled fully before serving, it slices clean, cool, and creamy, with that bright, fruity topping cutting through every bite.

Notes
You can put it in the freezer two hours before serving so it doesn't melt while you slice it.
