  2. In same frying pan, leave 2 tsp cooking oil. Saute garlic and cayenne pepper. Add soy sauce, vinegar, chicken stock, ground black pepper, and bay leaves. Bring to a boil. Simmer for one minute. Transfer sauce mixture to slow cooker.
  3. Cook, covered, on low for 4 hours.

Slow Cooker Chicken Adobo is a spicier, slow-cooked spin on the classic Filipino adobo, built on the same soy sauce and vinegar base but pushed further with a hefty dose of cayenne pepper. Browning the chicken first in a hot pan before it goes into the slow cooker adds a layer of savory depth that a straight braise wouldn’t get, giving the skin-off chicken a bit of color and flavor to hold onto through the long cook that follows.

Sautéing the garlic and cayenne together before adding the liquid is a small step that makes a real difference, letting the chile’s heat bloom into the oil so it infuses the whole braise rather than just floating on top. Soy sauce and vinegar do what they always do in adobo, balancing salty and tangy against each other, but here that tang has to hold its own against real heat from five chopped cayenne peppers, so the dish comes out sharp, savory, and properly spicy rather than mild. Four hours on low in the slow cooker is what ties it together, giving the chicken plenty of time to turn fall-apart tender while it soaks up all that garlicky, vinegary, spicy braising liquid. Traditionally served with boiled eggs and garlic fried rice, it’s a heartier, more fiery take on a familiar comfort dish.
