Spam Fried Rice is a fast, one-wok fried rice that layers savory and sweet in every bite, with Spam and bacon on one side and juicy pineapple on the other. Cooking the bacon and Spam together first in sesame oil lets both render a bit and pick up that nutty aroma, building a salty, slightly smoky base before anything else joins the pan.

Pineapple and peas go in next, just long enough to warm through, so the pineapple keeps its juicy, tangy bite rather than turning mushy or overly caramelized. That sweetness is really the heart of the dish, cutting through the richness of the fried Spam and bacon and keeping things from tasting one-note salty. Once the rice is stirred in, it’s coated with soy sauce for color and a savory finish, but since the Spam already brings plenty of saltiness on its own, there’s no need for extra salt to round it out. The result is a quick, well-balanced fried rice, savory and a little smoky from the meat, sweet and bright from the pineapple, with the peas adding small pops of freshness throughout.
